This specie was named Idiotfish due to its oversized head. They are bright red or orange-red with a strong and spiny ridge. They are proven to have a high oil content. Best enjoyed and ideal when prepared with soup: braise, sauté, stew, and poach are good options.
Idiotfish has buttery and mild flavor with a firm, coarsely flaked texture. And it is sweeter among other rockfish species.
